Hot Dog Time

When it is time for a summertime cookout, sometime only a hot dog will hit the spot. Be sure to check out the newer varieties of hot dogs that are now available. Low fat, pure beef hot dogs can be a great choice that has significantly fewer calories and fat grams than regular, mixed meat hot dogs. These still pack at least 6 or 7 grams of fat per wiener, hardly low fat, but compared to 13-18 grams of fat in other varieties, it makes for a significant savings in fat consumption.

Low Fat Ground Meat Recipes?

Want to cook healthy tacos, spaghetti meat sauces, chili, and any other dish that calls for ground beef? Easy - drain away the fat. There are a lot of recipes that call for ground beef (or ground chicken or turkey for that matter). Some recipes state that you should brown the ground meat and then begin to add vegetables, liquids or seasonings at that point. Other recipes state you should brown the meat and then drain off the liquid fat that has rendered during the browning process before you add anything or proceed. Always follow the latter! By dumping the fat you do remove some of the flavor and texture but you are removing a lot of the fat! You can always make up for both taste and texture as your dish nears completion using spices, seasoning, reduced broths or stocks, etc.

If you really want to drop the fat content, drain the fat as before but do so by placing the meat in a colander or strainer. Then rinse the meat with hot tap water from the sprayer, mixing or stirring so that all the meat is thoroughly rinsed. This can remove upwards of 50% of the fat content listed for your specific ground meat.

And do not be fooled by ground chicken or ground turkey! Look at the label. Unless the chicken or turkey is ground from the breast meat only, you will find that the fat content is comparable to lean ground beef. Just because its poultry, it does not mean it is healthier. You have to look and compare!
What about meatloaf? One way to reduce the amount of fat from your meatloaf is to use a meatloaf pan that incorporates an insert with holes in the bottom that allows the fat to drip down and away from the actual meatloaf as it cooks. Another method to reduce the fat in your meatloaf is to use low fat meats when preparing the loaf. Use equal parts of brown rice or rolled grain oatmeal (not instant), ground turkey and lean (93/7%) ground beef. Season as you normally like and cover with a catsup-based seasoned sauce as it cooks. If prepared in a normal loaf or a bread pan, make sure to drain any fat that accumulates several times during the cooking process.
