My mom never bought a cooking magazine. She owned a few cook books, usually assembled by the ladies of one of the local churches. These collections were the best of the best. My mom didn't experiment much with new recipes. She had a fabulous collection in her head that she rotated and repeated and we grew up eating home cooked meals nearly every day. These days there are so many recipes to choose from it can be truly overwhelming to get your little collection together if you haven't already got it or if you choose to eat a little healthier than they did back in the '50's!

Once I discovered the food section in our local newspaper, The Chicago Tribune, my experiments began. Soon, I was spending my waitressing money on The Better Homes & Gardens Cook Book of the Month Club. When the Italian chef finishes creating his feast she begins hyperventilating when she sees the condition of her kitchen!

When two high school seniors asked me to teach them how to cook I created a class for them. They asked a few friends to join and Camp Cucina was born the summer of 2004. In five days the students learn a little repertoire of recipes that are so simple after the first few times they will know them by heart, just like my mom did. Every recipe is so fabulous they want to make them again and again. In fact, some of my favorite stories come from parents who share stories with me about how their child contributes to get togethers by making something they learned that week.

This is truly the secret to getting anyone to eat healthier. No matter what the label says the truth is if the ingredients were processed by a machine, who knows when, using God knows what, it's probably really not all that healthy for you. Instead of spending your precious dollars on packaging and processing you can buy the highest quality ingredients. With a little bit of coaching and a handful of tried-and-true recipes you will prefer to eat at home rather than endure the hassles of eating out! Not to mention the expense. With the exception of a really high end restaurant, most anything most people eat out can be made even better at home for 10-20% of the cost.

About ten years ago a dad stopped me after school to question how I got his first grade daughter to eat vegetables. I was surprised by this because her mom packed home made lunches and always contributed something really yummy to the school potlucks. It wasn't until 7 years later when one of the teens in my cooking class admitted she would never eat this bowl of Tortilla Soup had it been served to her in a restaurant. She then asked for seconds. She made the soup that day, along with a few others her age who had discovered the joy of preparing and sharing a meal together!
